Grilling is not just reserved for meat cuts. In fact it can be used to prepare a whole range of meals and with summer upon us, I thought it fit to share this easy stuffed pepper recipe.
This recipe is the perfect example of how to make something beyond just a steak on the grill.
The peppers cooked over a grill will have an amazing texture, and a perfectly balanced flavors of meat, rice, spices, and smoke. When you get tired of classic meat and grilling, we suggest you try out this recipe.
What peppers can be used?
You can use just about any type of peppers that you have on hand once it is large enough to be stuffed. For this recipe bell peppers were used as they are quite large.
Do you have to cook ground beef before stuffing peppers?
It is not a must to cook the ground beef before stuffing. However, I personally think the ground beef is more flavorful once it is cooked before stuffing the peppers.
Tips and tricks
- Grill the peppers away from the direct heat. Just push them slightly to the side. If over a direct flame, they will burn.
- Instead of the beef you can use any red meat of you choice.
- For a Mexican twist, use chili and Mexican style blend cheese instead of the shredded mozzarella in this recipe.
Ingredients to make stuffed bell peppers
For this recipe, these are all the ingredients you will need:
- 2 green bell peppers
- 0.25lb. ground beef
- ¼ cup cooked Basmati rice or any rice
- 1 tsp onion powder
- ½ tsp paprika powder
- Salt and pepper, to taste
- ¼ cup shredded mozzarella
- ¼ cup tomato sauce
How to make grilled stuffed peppers
To start, gather all of your ingredients in one place.
Next, preheat the grill to medium. Also, at this point, go ahead and cut the bell pepper tops and chop those tops.
Heat some oil in a skillet and cook the ground beef and peppers along with your spices for 6-7 minutes.
Pour in the tomato sauce and add the rice making sure to stir to combine. Then simmer for 1 minute.
The stuffing of cooked beef, peppers and rice should look like this:
Next, stuff the peppers with the mixture and place the peppers on the grill grates, on indirect heat and cover either with a grill lid or aluminum foil.
Grill the peppers for 30 minutes. Top the peppers with cheese and grill until the cheese is melted.
You should serve these delicious grilled stuffed peppers warm.
How to store
- You can store these in a fridge for up to three days. Or you can freeze the peppers – Cover them in aluminum foil and then wrap the entire dish in plastic wrap to completely seal them up. Leave no part of the peppers exposed or else they may get freezer burnt.
- You can also freeze each pepper individually by cooling them, then wrapping them in plastic wrap. Set them into airtight freezer bags and freeze. A vacuum sealer also works great. Freeze for 3 months.
